the easiest way for your trip is to take the line 1310 from Florence to Siena and the line 130 from Siena to San Gimignano.
Return trip in the same way (130+1310)

I am also planning a day trip from Florence to Siena, then San Gimignano, then back to Florence. How late in the evening do the buses return to Florence from San Gimignano? What are the lines returning from San Gimignano to Florence?

unfortunately there isn’t direct line from San Gimignano to Florence.
You have to take two lines: 130 and 1310.
Firenze-Siena-Monteriggioni-Poggibonsi
You can change line in Poggibonsi or Siena.

Grazie Monica! Do the buses run late in the evenings back to Florence? We’d like to have dinner in San Gimignano then return to Florence. Any restaurant recommendations? Thank-you!
You could take the last bus from San Gimignano at 20:15 or 20:30 (depends on day of the week) and change in Poggibonsi at 21:15.
I do not recommend you a trip by bus in the evening. I suggest you to get some kind of private transport/transfer or Taxi.
